Most weeks I don’t get around to making everything on my meal plan. Some weeks, like last week, I find myself in a situation where I was a good girl and ate up all my leftovers before going on vacation but then I unexpectedly had my brother and sister over for dinner one night so I wasn’t generating enough new leftovers and I was done eating everything by Wednesday. Not only was I out of planned dinners for the rest of the week but I didn’t have any leftovers for lunches either.
Here are the filler meals I made for the rest of my lunches and dinners last week with things I already had on hand:
- tortellini with tomato sauce
- tuna salad on crackers
- pancakes and bacon
- salad with homemade bread
- bacon ranch quesadillas (inspired by Charlene)
Now on to this week’s meal plan (I’ll be having salads on the side with everything since I’ve still got lots of lettuce leftover from last week):

- Greek Style Mini Lamb Burgers from Everyday Food: Great Food Fast
- Toasted Coconut Custard Tart from Baking: From My Home to Yours

And don’t you hate it when you plan so well that you don’t have enough left to do what you wanted to do??? It’s frustrating when it all gets eaten at first huh?? My hubby teasingly tells me that I should be glad people eat my food.
