So much for variety because I’m going to have chicken twice this week. After a hard day of travel yesterday (a 5 hour delay in Denver due to that bomb threat issue in New York in the morning after we had already woken up at 5am so we could get home earlier in the day), I’m going for easy, tried and true favorites this week. Here’s what I’ve got on the menu:
- Pan Seared Chicken with Shallots and Carrots from Everyday Food magazine
- Maple Roasted Chicken and Sweet Potatoes from Real Simple magazine
- Flank steak fajitas (no recipe, I’ll just wing this one)
- Baking: Mom’s Oatmeal Chocolate Chip Cookies
