I’m trying my best this week to work with what I already have on hand. I adore this “Eat This” PDF from The Kitchn and have printed it out on a magnet sheet so I can keep it on my fridge for use with a dry erase marker. On the list, I’m putting all the things in the fridge that need to be used soon and I have listed lettuce, carrots, ricotta, parmesan, hamburger buns, and sandwich bread so I’m trying to work in all of those items. I’ve got chicken, ground beef, bacon, mozzarella, and blueberries stocked in the freezer. The only things I don’t already have on hand for this meal plan are the red potatoes and asparagus; the boyfriend and I are planning to go to the farmers market today so I hope to find them there.

Sounds like a great plan. Will have to take a look through your old meal plans and see if there are any recipes I want to make a note of.
the mozzarella and the muffins sound delicious.
