Meal Plan 4/12

I’m on a road trip to the Grand Canyon and other sights in Arizona all week (multitasking photography for extra income and vacationing during my five unpaid days off work) so no cooking at home this week. Here’s what I have stocked in the car for snacks and light meals (I’ll be eating out once or twice a day):

  • water
  • soda
  • apples
  • peanut butter, jelly, bread
  • granola bars
  • Mom’s homemade trail mix with dark chocolate M&Ms, coconut (that she dried herself – I’m impressed!), cashews, and raisins

Totally jealous–the Grand Canyon is SO beautiful! Enjoy your trip.

I never thought of drying coconut. Great idea! Mmmm..love homemade trail mix as well. :)
