One thing I’m especially poor at is making sure I eat vegetables on a daily basis, so this week (and hopefully beyond this week) I’m going to focus on including them with each meal on my meal plan.

Sounds like a great week…anything pan-seared sounds delish to me!
I do so much better with veggies when they are part of the main dish or if we have salad fixins in the fridge.
