Meal Plan 2/1

Forgot I had another business trip and would be gone two nights last week so I have meals from my meal plan to roll over again but that’s okay – planning too much is better than not planning enough. I’ll be in town every night this week and I’m planning five meals (from Everyday Food: Great Food Fast again – I’m loving this book):

  • Garlic-roasted Chicken Breasts with brussels sprouts
  • Crispy Apricot Pork Chops
  • Enchiladas with Pumpkin Sauce
  • Baked Shells with Winter Squash
  • Macaroni and Cheese with Ham

I’ll also grab some fresh salad and frozen vegetables at the grocery store to have as sides.
