I have a variety of breakfast foods on hand: oatmeal, cereal, bagels, yogurt, milk, fruit which I mix and match to keep things interesting. I also sometimes bake muffins or breads in the evenings or on weekends to eat for breakfast.
For lunch I usually eat leftovers or something quick like canned soup, chili, or I make some pasta – I have the luxury of working close enough to home that I can go home for lunch.
Dinners this week will be (I’ll plan only 5 since I expect to eat out at least one night this week and will have some frozen stuffed pasta if I end up eating at home those days). I’ll be having a salad with my dinner every night since I’m buying 2 bags (buy one get one free deal) and I live alone.
- Roasted Chicken and Acorn Squash
- Beef Enchiladas
- Beef Stroganoff
- Pan Grilled Pork Kebabs with Rice and Peas
- Spice Rubbed Turkey Breast with Sweet Potatoes (I’ll sub chicken for the turkey in this recipe since I have chicken on hand)
