I find that meal planning is easiest for me when I work on it throughout the prior week. As I’m browsing through magazines or food blogs, I make a note of recipes that looks particularly appealing and by the time Sunday rolls around I’m usually already done with my meal plan and ready with my grocery shopping list. On tougher weeks, those weeks where I’m not inspired by new recipes I spot, I go for tried and true favorites or I browse through my binder of magazine tear outs.
Some weeks I plan more than I get around to making but then I have all the things necessary to make those recipes on hand for future weeks when I end up not planning enough meals. I also try to plan the bulk of my cooking to use ingredients I already have in my kitchen.
Here’s what I’m inspired to make this week.
- Romano Ranch Chicken and Rice Skillet Dinner
- Simple, Perfect Enchiladas from The Pioneer Woman Cooks
