Last week’s Turkey Meatballs from Everyday Food: Great Food Fast were amazing. They were quick and easy to make (I used a cookie scoop to form them rather than rolling them by hand and baked them rather than pan frying) and delicious. They’re going on my list of favorite things to make often. The recipe made 6 servings so I ate one that night, put two in the fridge with pasta prepared for lunches during the week, and put the other three servings in the freezer to pop out when I’m making a quick pot of pasta some day in the future.
I’m indulging in more fall flavors this week (might be my favorite food season). Here’s the plan:
- Sweet Potato Risotto from Real Simple magazine
- Pumpkin Turkey Chili
- Candy Corn Bark (I’ll be substituting dried cranberries for the raisins since I already have them and they’re more fall-ish)
