A few weeks ago, Katie at Kitchen Stewardship (who guest posted for us last summer) released her first ebook: Healthy Snacks to Go. The book is packed with 30 healthy snack recipes plus a ton of ideas for nutritious snacks so easy they don’t even need recipes.
My favorite recipe in the book is Katie’s Easy One Bowl Muffins. She offers several different fruit based variations and I picked pumpkin to make because I’m a huge fan of pumpkin bread. I made it as a loaf (which she also provides instructions for) rather than muffins because I was feeling super lazy and didn’t want to scoop out all the individual muffins. Here’s how the recipe goes: dump all the ingredients in a bowl, stir, dump it in a pan, bake, eat. It’s as easy as a boxed mix (and it’s as good as the Krusteaz boxed pumpkin bread mix that Costco sells in the fall which is saying something because I’ve tried a million pumpkin bread recipes and this is the only one that even came close – if you threw in some chopped nuts you wouldn’t be able to tell the difference). The only thing I’d do differently on this recipe in the future is to always make a double batch because a) you’re gonna want another loaf as soon as you’re done eating the first one and b) then you can use the whole can of pumpkin at once which is just easier.
