healthy snacks to goA few weeks ago, Katie at Kitchen Stewardship (who guest posted for us last summer) released her first ebook: Healthy Snacks to Go. The book is packed with 30 healthy snack recipes plus a ton of ideas for nutritious snacks so easy they don’t even need recipes.

My favorite recipe in the book is Katie’s Easy One Bowl Muffins. She offers several different fruit based variations and I picked pumpkin to make because I’m a huge fan of pumpkin bread. I made it as a loaf (which she also provides instructions for) rather than muffins because I was feeling super lazy and didn’t want to scoop out all the individual muffins. Here’s how the recipe goes: dump all the ingredients in a bowl, stir, dump it in a pan, bake, eat. It’s as easy as a boxed mix (and it’s as good as the Krusteaz boxed pumpkin bread mix that Costco sells in the fall which is saying something because I’ve tried a million pumpkin bread recipes and this is the only one that even came close – if you threw in some chopped nuts you wouldn’t be able to tell the difference). The only thing I’d do differently on this recipe in the future is to always make a double batch because a) you’re gonna want another loaf as soon as you’re done eating the first one and b) then you can use the whole can of pumpkin at once which is just easier.

Time to get a kick start on the spring cleaning season. I’m keeping things pretty simple this year on account of my illness and reduced activity level.

My spring cleaning plan this year looks like this:

  • decluttering
  • moving things I do want to keep to more efficient locations when applicable
  • disinfecting surfaces and things I touch
  • washing all my sheets and blankets (let’s not think about how long it’s been since I’ve washed my bedding)
  • washing random kitchen, bathroom, and living room stuff that doesn’t get in the regular weekly laundry (i.e. hot pads, throw pillows)
  • hopefully talking Dad into a thorough vacuuming and floor mopping (a little high intensity for me at this time, especially the dragging the vacuum up the stairs part)

This past week I’ve been testing out Seventh Generation’s multi-purpose cleaner, bathroom cleaner, and disinfecting wipes. Along with the products, I got a handy recycled plastic caddy to store them in. It’s perfect since Dad has been over to help clean a few times in the past few months and always complains that I keep all the cleaning stuff in the upstairs closet which he doesn’t thing is an efficient and convenient location. I loaded up the caddy with my new products, some rags, and some scrub brushes and it’s now living under the downstairs bathroom sink (it’s also easy to move it all to wherever he thinks is the perfect location for it when he’s here).

I’m using the multi-purpose cleaner to wipe down surfaces, knobs, handles, and switches in most rooms; the bathroom cleaner for everything in the bathroom; and the wipes are absolutely perfect for wiping down my Wii Fit balance board after using it (I don’t know about you but my feet get awfully sweaty especially when I’m doing Super Hula Hoop).

Good news on the cancer front, last week I had a PET scan and no more cancer showed up on it. But I do have a mass of scar tissue where the largest grapefruit sized tumor was in my lung cavity on the left and I have a non-cancerous abnormality going on in my right lung causing it to not fully inflate at this time (more tests on that later this week). I have to say that the best part about these products is that it’s nice to be able to use cleaning products that don’t make me worry about what’s getting in my lungs while I’m already having lung issues. I only notice my lung issues when I try to take a deep breath or I cough and traditional chemical cleaning products do have a history of making my cough so the less chemicals the better especially at this time.

fiber one yogurtI’m pretty picky about my yogurt. After trying a zillion different brands, the only one I like is Yoplait. It’s has a perfect smooth, creamy, and not too wet texture.

Since my chemotherapy began in December, I’ve been trying to make sure I get lots of extra fiber so I can avoid additional prescription medications to deal with the digestive issues from the treatment. At that time, I switched from buying my classic strawberry Yoplait yogurt to Yoplait’s Fiber One strawberry yogurt. It’s tastes exactly the same just with some extra fiber packed in, if you were serving it in a bowl you wouldn’t be able to tell the difference.

My only complaint about the Fiber One yogurt is that there is only a low fat option. I’m a big fan of full fat dairy because it’s so flavorful and I think it’s actually better for you than low fat dairy.

Fiber One yogurt 4 packs are on sale 2 for $4 through February 9th at Safeway stores. I’ll be grabbing a few on my shopping trip this weekend.

Review: The Pioneer Woman Cooks

51ATpyDehUL._SS500_The Pioneer Woman Cooks has been out for a couple weeks now and I’ve made four recipes from it so far:

  • Maple Pecan Scones I halved the recipe on the frosting on these and it was still way more than enough
  • Chicken Pot Pie perfect, amazing, and way better than even Costco’s take and bake chicken pot pies
  • Ribeye with Whiskey Cream Sauce this is the only one I wouldn’t make again, not because it wasn’t good but because I have other better recipes for preparing steaks
  • Simple, Perfect Enchiladas not that simple but much better than any other enchilada recipe I’ve ever tried and I’ve tried lots, I used Trader Joe’s enchilada sauce and highly recommend it as well

All of these recipes were more complicated that my typical prepare in 15 minutes, one bowl or one pot items. The recipes all have very detailed instructions with a picture for each step which makes them really easy to follow and easy to do even though I think the recipes are somewhat advanced.

The recipes in this book are all full fat and not for the feint of heart. Three of the recipes called for both butter and cream and the fourth recipe involved “lightly” frying tortillas. But all that fat made everything absolutely delicious.

So what didn’t I like about the book? No table of contents and she’s got main dishes in at least 3 different chapters so once you know the recipe is in there it’s kind of a pain to find it again. Also, the recipes are interspersed with photos that aren’t of the food. I would have rather those photos be grouped at the beginning or end or left out completely.

Overall my opinion is yummy, yummy recipes and great instructions but the layout of the book doesn’t fit my style.
