Aunt Ann’s No Knead Bread

This is my aunt Ann’s recipe for no knead bread and it is just absolutely the best and easiest bread ever.

This bread requires an oven safe 3 1/2 quart pot to bake in. I already had one in my cookware set but Ann likes to buy them on sale at Kohl’s for around $30 to give as gifts along with her recipe.

Ingredients:
3 cups of flour, plus 1/2 cup more for later
1/4 tsp yeast
1 1/2 tsp salt
1 1/2 cups water

Mix 3 cups flour, yeast, and salt. Add warm water. Cover bowl and let sit for 12 to 18 hours (longer is fine too).

Add additional 1/2 cup flour to the dough. Fold it in well with a rubber spatula. Cover and let sit for another 2 hours (longer is fine too).

Half an hour before you want to bake, preheat your oven to 400F with your pan and lid in the oven. (At this point, if you have oven mitts I highly recommend using them. I slipped holding the pan with a square pot holder and burned myself and my sister completely forgot to use pot holders and burned her hand very badly.) Once preheated, take the pan out and plop the dough into it. Put the lid on. Put it back in the oven and bake for 30 minutes with the lid on, followed by 10 minutes with the lid off.

Try to restrain yourself and let it cool a bit before eating. I can usually make myself wait about 15 minutes before I cave. Top with butter or a dollop of Brie like you see in the picture.

I’d LOVE to try this. Just a question – 1/4 teaspoon of yeast seems like a small amount – is that really enough? Thanks!

it is a tiny amount but that is really all it takes

I make this bread, and it is SOOOO good, I have to bake two loaves at a time. The first loaf is always gone within 2 hours. This is one of the best breads I have ever eaten, and it is so easy!

Your Aunt Ann is one smart lady!
This is very similar to the master recipe used in the Artisan Bread in Five Minutes a Day book. (They have a website and the recipe can be found online by doing a search.) Some differences in bake time/temp from your Aunt.
The thing I love most about the book method is that the basic dough batch is large enough for (4) 1-lb loaves. It sits in the fridge waiting for you to cut off a hunk and plop it in the oven.
I think I could do it daily. I have dough in the fridge right now and I’m restraining myself from making a loaf just to eat tonight. I’ve already had dinner!

I make no-knead bread all the time, too! I recently found a recipe that requires just TWO hours of rising time before baking. It also makes more than one loaf; you simply put the remaining dough in the fridge for up to two weeks. Two hours before you want to bake it, you take it out and shape it. Cooking bread in the pot really works well.

What kind of flour do you use? I’m assuming that since you’re not soaking it in an acidic medium, you’re probably using a sprouted grain flour?

Good grief, this sounds GREAT. I am pretty sure I can live by bread alone….I LOVE IT ! Thanks for the recipe; I may have to try using a different pan, however. I don’t have the kind you suggest. Wonder what I have that would work…?? I’ll think about it.

This looks really interesting! I’ve wanted to try one of the no-knead recipes, but most of them sound pretty messy…this looks very simple.

What keeps it from sticking to the pan? You don’t oil the pan at all, right?

This is great! I’ve always wanted to make my own bread, but it seems to be so much work. I wonder if this will work in loafs? I may need to take a trip to our Kohl’s and see if I can find one of those pans! Thanks!

Thanks for the easy recipe!

I’m curious as to why the pan needs to be preheated? Does that help to develop the crust, or make it not stick to the pan?

I intend to use my stock pot to bake it (all my other pans are non-stick and can’t go in at 400F), but is there any reason it can’t be baked in a casserole dish?

i’d guess it does help develop the crust but i’m not actually sure as i’ve never tried cooking it any other way

I actually had no idea there were different kinds of yeast. I use some that my mom scooped out of her Costco sized bag of yeast into a smaller container for me so I have no idea what kind it is.
