Grasshopper Pie

Grasshopper pie is a cool and refreshing dessert you can make without turning on your oven which makes it perfect for hot summer days. This type of pie is an “icebox pie”. Icebox pies classically have a cookie crumb crust and do not need to be baked.

Ingredients
25 chocolate sandwich cookies
1/2 cup melted butter or margarine
1 jar marshmallow cream or 30 large marshmallows melted with 1/2 cup milk
1/4 cup creme de menthe
1 pint whipping cream

Crush cookies and mix with melted butter. Press into pie pan.

Whisk together marshmallows and creme de menthe until smooth. Whip the whipping cream to soft peaks and then fold in marshmallow mixture. Pour into crust and freeze for at least 2 hours before serving and then remove for 20 minutes before cutting (if you don’t, the crust won’t cut).

Grasshopper pie is amazing. I never make it though because I have no self-control and no one in the house likes mint. Dangerous combination.

I found you via Ann’s Food on Fridays. I haven’t had grasshopper pie in so long. My mom used to make this when I was a kid. I do love chocolate and mint. Perfect summer dessert. :)

Wow that looks amazing I would sooo love this!!! mint and oreos can’t be beat! The only bad thing is I’d have to eat the whole thing, hubby isn’t into mint…. or wait maybe that’s a GOOD thing!!!
