Tex Mex Beef Enchiladas

To make these beef enchiladas, I roughly followed this recipe from the PBS Everyday Food website. I used their instructions for the beef mixture and assembly but I already had a packet of Lawry’s enchilada mix in the cupboard so I used that up rather than getting the additional ingredients to make the sauce in the recipe. One thing I did notice about the instructions in the recipe is it says to use an 8″ square pan but that’s going to be way too small, you’ll need a 9″ x 13″. As an extra green step, I reused the aluminum foil I heated the tortillas in to cover my baking dish and store the leftovers in the fridge for tomorrow. I had originally planned to have rice and beans on the side but it was too hot for that today so I just had some mixed green salad on the side, rice and beans will last in the pantry almost indefinitely so I don’t have to worry about them spoiling since I didn’t get to them as planned.

I’ve made these too and like them a lot! Last time I made a double batch and froze some in the freezer. Great to have on hand! I like your picture, mine didn’t turn out as pretty – I think you’re right it is too crowded in an 8×8 pan.
